Sherry
Sherry is a fortified wine made in Jerez, Spain. At one time, before the phylloxera epidemic there were over 100 grapes used in the production of Sherry. Today the only permitted grapes are Palomino, Pedro Ximenez and Moscatel. Sherry is produced using the Solara system, in which newer vintages are mixed with older ones to create a wine of superior quality. There are a variety of different Sherries among them are:
Fino- Fino is traditionally the palest and driest of the varieties. Aged under Flor yeast to prevent oxygen contact.
Amontillado- This is Darker than fino and is usually dry although sometimes sold lightly sweetened.
Oloroso- Oloroso is darker and means, “scented” in Spanish. This is a rich wine with a lot of alcohol in it.
Manzanilla- This type of sherry is a lighter version of Fino.
Manzanilla Pasada- This is a version of Mazanilla that has been aged and exposed to oxygen that gives it a nice flavorful nutty taste.
Palo Cortado- These Sherries are aged over three years.
Cream Sherries- Cream or sweet Sherries are made with Moscatel grapes which gives it sweetness. Later it is mixed with a drier wine.

Harveys Bristol Cream features flavors of roasted nuts and raisins, with a subtly spicy finish. Harveys Bristol Cream is usually served well chilled as an aperitif, as an after-dinner drink straight, or on the rocks with a wedge of lime or slice of orange. The ice lessens the viscosity and the citrus lowers the sweetness to create a refreshing drink. As a dessert wine, serve with cheesecake, flan, bread pudding or creme brulee.
