Brandy
Brandy is a distilled wine that is categorized as a spirit. Brandy generally contains 35%–60% alcohol by volume and is typically taken as an after-dinner drink. Some of the higher quality Brandy is aged in barrels, while some are have added caramel coloring to imitate the effect of such aging. Some brandies utilize both the aging and coloring technique.
Some Brandies are distilled from fermented fruits other than grapes, but these are labeled eaux-de-vie. Since most Brandies are distilled from wine, the flavors of the wine are still present in the brandy because distillation is done at the low temperatures that ensure that the vapors contain higher proportions of the congeners, the organic compounds in the wine that define its flavor profile.
