When you think of Cognac, you often picture a bunch of old men sipping and smoking cigars while disputing politics. Many view cognac as unapproachable but recently many have changed their opinion about cognac. Its delicate character and complexity of grapes and barrel flavors are changing the opinions about this finely crafted beverage. Ugni Blanc is the main varietal used in Cognac. Many are confused about the comparison between brandy and cognac. Cognac is brandy but it is only produced in a region called Cognac. In order to be able to be named Cognac, it must follow strict guidelines and methods of distillation. Some of these regulations include being distilled in pot stills made of copper and aged in special oak barrels. Cognac ages the same way that whiskey ages.
There are different grades that cognac falls under:
Very Special (VS) - which is the youngest of all.
Very Special Old Pale (V.S.O.P.) - known as Very Superior Old Pale, is older than V.S. which means it spends a minimum of four years in wooden casks.
Extra Old (X.O.) - is older than the other grades and stored at least a minimum of six years but this regulation will change to a minimum of 10 years although many spend close to twenty years.
There are other grades such as Napoleon, Extra, Vieux, Vielle Reserve, and Hors d’age.

Traditional distillation method on the lees (natural sediment after wine fermentation) allows the cognac to develop richer aromatic notes. Fussigny's historic cellar located on the banks of the Charentes River has the perfect humidity which brings out the aromas of the cognac and creates a rounder, more subtle taste.
The cognacs used to make Fussigny Selection are aged an average of 8 years resulting in a subtle and elegant character with notes of vanilla, flower, spices and pepper.

Our insistence on double distilling using the lees, the yeast residue, imparts even greater depth, complexity and sublime notes to our Courvoisier Napoleon Fine Champagne cognac that best resemble the sharply sweet aroma of dried apricot.

Unsurprisingly, this aroma is clearly traced from the perfectly humid conditions of our earth-floored warehouses where our eaux-de-vie ages.

Legend Has it that Napoleon held Emmanuel Courvoisier's cognac in such high esteem that he took with him hundreds of bottles to enjoy during his years in exile.
This reserve became known as Le Cognac de Napoleon, a description still proudly borne today on all Courvoisier cognac.
