"Made form Sangiovese 90% and the minimal addition of Canaiolo 5% and Colorino 5%. The grapes were harvested in small crates and carried to the winery very early in the morning. The wine was fermented in cement tank, and no sulphur was added at any stage of the fermentation to allow only indigenous yeast to convert the grape sugars into alcohol. The fermentation was immediate and dynamic probably due to the elevated sugar levels in the juice. Made with organic grapes."
