"Matrot's winemaking, if not revolutionary, is iconoclastic. His aim is to maximise fruit, to assist the terroir in expressing itself through the grape and to retain maximum elegance. Matrot's son Thierry increased the reputation of the estate. He harvests at optimum ripeness, usually about 13% alcohol although the ideal varies from year to year. He dislikes the taste of over-ripeness, especially in Chardonnay, preferring to maximise maturity without risking the richness that can result from too late a picking. The white grapes are pressed and chilled and given a 24-hour debourbage before being transferred to casks for fermentation. The reduced use of synthetic chemical treatments on the vines has improved the variety of microflora in the vineyards, including the natural yeasts many consider necessary for wine complexity."
