A delight at the beginning of the meal, La Porte du Caillou is an excellent companion to fish dishes. Kernel of scallop with mango emulsion, a roll of bass in curry and of course, the famous Crottin de Chavignol goat cheese. This wine is fermented between 15-18°C in temperature controlled stainless steel tanks then is elevated for 5 months on its lees with the fermentation preserving all the aromatic potential.
